On Tuesday, September 14 at 6:30 p.m. SHELLY repeats one of her most popular classes when she does some TRADITIONAL CAST IRON COOKING ($42). This class, which always sells out begins with a Spinach Salad with Hot Bacon Dressing served with a Skillet Corn Bread. The main course is just the best Fried Chicken with Pan Cream Gravy you’ve ever tasted, served with skillet-baked Louisiana “Can’t Fail” Biscuits. Dessert is a made-from-scratch Pineapple Upside Down Cake just as pretty as it is yummy.

She repeats her classes on a regular basis because her foods have such universal appeal and you keep asking her to repeat them. She’s taught more than 30 different menus, and repeats the same dozen or so “stand-bys” every year. SHELLY has one rule: You don’t need any great skills to take these classes, and these are recipes you will use again and again.
