The ketogenic diet is a very low-carb, high-fat diet that shares many similarities with the Atkins and low-carb diets. It involves drastically reducing carbohydrate intake and replacing it with fat. Chef Chad started Keto dieting over a year ago and has seen great success with it. He will share his knowledge and several of his recipes. Class is limited to 16.
 
STEAK HOUSE SAUCE SECRETS

This class will focus on sauces for steaks. Chef Tom will teach a few different ways to cook perfect steaks at home, both in the oven and on the stove. While the steaks are resting, Chef Tom will prepare wine reduction, demi-glace, butter, and herbed cream sauces. Class is limited to 16.

Salmon is such a great seafood, loaded with omega-3. Fresh or frozen salmon is available everywhere in the MOV (always buy wild caught). As a chef and native of Massachusetts, Tom knows his way around seafood! He'll be teach you how to pan sear Salmon, oven roast it, poach it and bake Salmon Cakes. Class is limited to 16.

This class will focus on casseroles with great flavor that are created in one skillet for easy clean-up. Who doesn't love risotto? Who never makes it because it requires constant attention while cooking? Dagmar will teach the traditional, slow and steady way to make a perfect Risotto. She'll then turn to modern technology and make a Cheesy Risotto using a multi-cooker. Lastly, she'll make Risotto using the microwave. We'll vote for a favorite at the end of class! This class will feature pasta as the center of the meal! Dagmar will discuss why different noodles are better for some sauces than other. Do you toss the noodles in olive oil before tossing with sauce? What is "el dente"? There will be 4 basic sauces used in this class. Dagmar will give a brief history of sushi in Japan. Two methods of cooking the perfect sticky rice will be covered, the most important part of sushi making. Dagmar will demo several types of sushi, then each student will make 2 sushi rolls of their choice. So, come hungry to this class! Take-home sushi mats and chop sticks are included! Traditional chicken, beef, and pork pot-stickers will be covered in this class. The focus will be on the "pleating", fillings, and sauces for these Asian delights. This class will NOT focus on the dough and rolling "skins", maybe Asian doughs will be another class. This class will be semi-hands-on, each student will learn the "pleating" techniques.
