With the goal of doing as much as possible in advance, we can maximize our holiday time with family and friends with less stress. On the day of, simply bake the potatoes until heated through and golden brown on top. Plan on making enough for seconds for everyone!Do-Ahead This entire dish may be assembled the day before Thanksgiving. Cover and refrigerate until you’re ready to bake.RECIPE NOTESSTART WITH THE RIGHT KIND OF POTATO. Choose a high-starch potato such as Russet, or an all-purpose, medium-starch variety like Yukon Gold. STEAM THE POTATO CHUNKS or gently simmer until tender allowing the potato pieces to stay intact. Drain the potatoes well; place the pot back on the burner to further evaporate any leftover water. HEAT THE MILK on the stove with the whole cloves of garlic. Simmer for 5-10 minutes to infuse the milk with the garlic flavor, then discard the garlic. MASH THE POTATOES MANUALLY with a potato masher, ricer, or food mill. Do not use a blender or food processor; these high-speed tools will break the starch molecules and make the potatoes gluey in texture. MIX IN THE BUTTER, GARLIC MILK, SOUR CREAM, CREAM CHEESE into the mashed potatoes until creamy. Season with salt and pepper, to taste. Place the potatoes in a baking dish, and top with a few pats of butter. Cover, and refrigerate until ready to bake.BAKE AT 350°F, for 40-50 minutes, or until slightly browned on top. Serve with a garnish of chives.corn bread STUFFINGStuffing is a must at every Thanksgiving table! Our favorite stuffing gets it's distinct texture and flavor from easy-to-make, homemade corn bread in addition to dried stuffing croutons. Fresh herbs brighten this dish that just might become a family favorite staple during the holidays.RECIPE NOTES THE FRESH HERBS, sage and rosemary, are a delicious and essential part of this recipe. If using dried herbs, use about one-third the quantity – dried herbs have more concentrated flavors than fresh herbs. ONE DAY AHEAD: 1. MAKE the corn bread. Mix the wet ingredients together, and the dry ingredients together, then combine, and bake.2. DICE the onions and celery; sauté until tender. EARLY IN THE DAY: 1. MINCE the herbs and assemble the stuffing. 2. While still plenty for serving a crowd, this recipe requires a fraction of the time to roast, and is filled with deliciousness! Make life easier by having your butcher debone and butterfly a turkey breast. Assembling the roulade takes a bit of patience, but is easier then one might think. Get ready to wow your family and friends with this moist, flavorful turkey this year! ONE DAY AHEAD: 1. PREPARE the bacon and mushroom filling, keep refrigerated.EARLY IN THE DAY: 1. UP TO 4 HOURS BEFORE EATING, ADD THE FILLINGto the turkey, roll up, and tie with kitchen twine to hold it together.
