You will learn the "new way" to roast your turkey... upside down! From scratch dressings, gravy, and some new side dishes to replace those same-old, same-old ones. Gayle will create honey & chipotle glazed sweet-potato spears with lime, New England succotash (zucchini, onion, red bell pepper, corn and lima beans), and green beans with lemon-butter bread crumbs and toasted almonds. Gayle will feature Winter squash bread, Holiday fruit bread (NOT that thing you get and don't eat), Chocolate hazelnut bread, and cranberry scones. Great for giving as gifts or just eating! SOUS VIDE, "WATER OVEN " COOKING 101 AND WINE PARING

This is an exciting 2 part class! What is Sous Vide? It's a temperature controlled water bath that's a cross between a crock pot and an oven. Used in the food industry for years, they allow you to cook foods perfectly without loss of moisture or flavor while making it almost impossible to overcook. New technology has now brought the price of these ovens down to affordable levels. To demonstrate the abilities of this unique cooking method, Dagmar will be creating Poached Salmon Salad with Cucumber Dressing, Sirloin Steak with Gratin Dauphinois (potatoes), Cranberry Walnut Stuffed Turkey Breast with Beets in Orange Juice and Agave Nectar, and Poached Pears in Red Wine ala Mode. Yes, all will be prepared ala Sous Vide! To top this class off, Sally Oliver from House Of Wines will discuss and sample four wines to accompany the menu! Class is limited to 16.
