Salads are year-round fare, but especially desirable in the summer where gardens and farmers' markets overflow with the best produce of the year. It's a great time to embrace "Buy Fresh, Buy Local," and salads are a natural choice for the fresh harvests underway now.

IN THIS ISSUE, we feature three salads with delicious, fresh dressings that sparkle and bring out the best in all the ingredients. Salads beg for improvisation, play the plate with choices from whatever is around - there are no wrong combinations!

Monday, July 11th ● Lelia Gentle - DreamCatcher Farm ● $45.00 ● "Fresh Fish Cookery 101" 6:30 - 9:00 pm ● Demonstration Class We will discuss selection, handling, storing & freezing of fresh seafood as well as basic tips for baking, sautéing and searing. This class has put many Louisvillians on the path to confident seafood cookery! Menu: Smoked Salmon Dip ● Herb Crusted Cod with Roasted Rosemary Potatoes ● Sauteed Freshwater Trout ● Ginger Garlic Crusted Salmon with Stir-Fry Veggies ● Meringues with Lemon Curd

 

Wednesday, July 13th ● Cathy Webb - Cathy's Designer Cookies ● "Christmas In July" ● $45.00 ● 6:30 - 9:00 pm ● Hands On Class! Often we are just too busy during the Holidays to even think about learning to decorate Christmas Cookies. Just smell the Gingerbread Cookies for "Christmas in July"! Some of the things you will learn are how to roll out and bake perfectly shaped cookies, several different cookie decorating techniques, including the use of royal icing, outlining and flooding cookies and the sanding technique. She will also share her recipes for Traditional Sugar Cookies & Royal Icing.

Saturday, July 16th ● Nicki Leathem - Custom Catering/Personal Chef by Nicki ● "More Delectable Pastries" ● 11:30 - 2:00 pm ● Partial Hands On Class! If you took her class in the spring, this is the class you were promised! If not, now is your chance. Learn to make Danish Dough and turn it into numerous bakery treats. You will also learn the tricks to create beautiful fresh fruit arrangements for your table. Monday, July 18th & Wednesday, July 20th ● Vanessa Hayden - The Wedding Cake Company ● "Beginning Cake Decorating" ● $45.00 ● HANDS ON CLASS! 6:30 - 9:00 pm This two part class is designed for the beginning decorator or a refresher course for a more seasoned student. In this session you will learn the basics of baking a cake, types of icing and consistencies and Vanessa will demonstrate how to fill, ice and decorate an 8 inch cake. Now it will be your turn - you will learn how to color icings, fill a decorating bag and make various types of borders, writing and outlining, roses, swags and bows, figure piping, to name a few. You will also learn the basket weave technique. **Please ask for your supply list!
