It's one of our favorite daily moments - that brief time of day when we pause from our work, sip a cup of coffee, ponder what's next on the to-do list, and regain some of our mojo.

IN THIS ISSUE, we pursue a better coffee break with a toast to the roast, and the recipe for making the perfect cup of coffee. A bite of something sweet, always goes well with a cup of coffee, so we've included three fabulous coffee cake recipes to savor along with your favorite cup of joe.

"Sausage Making - The Lost Artesian Art 201" ● $45.00 ● 11:30 - 2:00 pm ● Hands On Class! You will learn to make sausage, in your home, that will not have the nitrates and preservatives, which are bad for your health. Learn advanced skills in making sausage including how to make your own sausage links. In this class you will learn how to make Sweet and Hot Italian Sausage, Andouille, and a smoked Chorizo. Grind it up and pipe in a casing because that how we do it fresh. You can go with what you know, or you can kick it up a notch and smoke it. Monday, October 10th ● Mac McBride - Sullivan University ●
" A Journey into the World of Craft Brewing" ● $35.00 ● 6:30 - 9:00 pm ● Demonstration Class Step by step instruction on how to brew fresh beer. He will be brewing, during the class, two styles of Ale. Other topics that he will be discussing are Liquid Extract, Dry Extract, Base Malts, and Specialty Grains that add interest to your craft brews, Flavorings, Yeast, Sugars, Carbonation, and Bottling vs. Kegging. This class includes with proven, tasty recipes to begin your journey into the craft brew world. Mac has been making his own brews for years, creating different styles and flavor combinations. Snacks and tastings will be served. Students must be a minimum of 21 years old (proof of age required).

"The Mystery of Turducken Revealed!" $45.00 ● 6:30 - 9:00 pm For those of you who haven't heard of this outstanding creation, listen to this! The turducken is a boneless chicken stuffed into a boneless duck stuffed into a boneless turkey with two different dressings layered between the different poultries. Once cooked, it is cut, giving you a gorgeous slice (looks like a pinwheel) consisting of each bird and each stuffing. John will teach us, step by step, how to make our own turducken, in this awesome class. It is a showstopper and perfect for your Thanksgiving table! Sauces can change a plain piece of chicken, steak or pork into an entree you would be proud to serve to a special guest. Learn how sauces pair with different foods, learn about contrasting flavors as well as sauce finishing techniques. Once you have learned stocks and mother sauces you are ready to move on to more advanced sauces. Let's learn to decorate gorgeous Halloween cookies that are too pretty to eat! This hands-on class is limited to 15 students so there will be plenty of time for each student to receive individual attention while decorating 4 different gingerbread cookies that are works of art: Large, Dimensional Haunted House, a Spooky Ghost, a Scary Black Cat with a Fuzzy Tail & Green Eyes and a stunning Autumn Leaf made using the watercolor technique. Some of the things you will learn are how to roll out and bake perfectly shaped cookies, several different cookie decorating techniques, including the use of royal icing, outlining and flooding cookies and the sanding technique. First part of the class, students will learn many baking tips and just how to bake these perfect little cakes, then how to work with a simple butter cream icing and frosting techniques. Students will take home 4 beautiful cup-cakes to enjoy as well as sampling in class. All recipes will be included in class. Each student will take home one of each flavor cupcake.
