Spring Salad with Radishes, Fresh Asparagus, Peas & Bacon
Serves 2
Ingredients:
1/2 small head butter lettuce
5 sprigs asparagus, sliced finely
4 radishes, sliced finely
4 slices bacon, sliced
1/2 cup frozen peas
Dressing:
3 tbsp olive oil
1 tbsp red wine vinegar
1/2 tsp dijon
1/2 tsp honey
kosher salt
freshly ground pepper
Directions:
Fry bacon in a skillet. Remove from pan, and set aside. Drain out most of the rendered bacon fat, and then add peas and heat up. Mix dressing and coat over with all ingredients. Serve immediately. |
